Recipe of the Month: Green Waffles
March 17th marks St. Patricks Day. Otherwise known as the Feast of St. Patrick, we thought it only right to celebrate the luck of the Irish with this super fun breakfast idea.
We asked Insta-foodie and fitness enthusiast, Chelsea Maccoll, to share her fantastic Green Waffles recipe with us.
This super healthy recipe is bursting with protein, full of eggs and spinach. A simple to make, low calorie alternative to traditional potato waffles, plus kids will love the fun green colour! And it’s even Gluten AND Dairy free.
Chelsea’s Green Waffles
Will make: Approximately 6 square waffles
Recipe is Gluten & Dairy Free
- 3 Medium Eggs
- 85g Rice Flour
- 1tbsp Baking Powder
- 30g Spinach
- 85ml Almond Milk
- 1.5tbsp Coconut Oil
- Pre-heat your waffle maker
- Heat the coconut oil until it is a runny liquid
- Add all ingredients to a blender
- Blend until mixture is smooth
- Pour the mixture onto the waffle maker
- Cook until the waffles are solid
I like to top mine with poached eggs and fried mushrooms, which I whip up whilst the waffles are cooking, and then add some chunky ham on top. But the possibilities are endless! Just top them with whatever takes your fancy, or keep it simple and eat them on their own.
